Basic Lemon Cupcakes Recipe!

Hello everyone ! 
I've always loved to bake and lemon cupcakes are one of my favourite cupcakes ever !! 
Its easy to make and it does not need much ingredients ! :)
I'm not super good at it and there's ALOT more to improve ,but i thought i'd still share this recipe cause its really yummy ! hehe 


What you'll need is :


Cupcakes


115g of flour 
1/2 teaspoon baking powder 
113g of butter/margarine 
115g caster sugar ( i'll always reduce it to 95g, it depends on how sweet you like it)
2 eggs 
finely grated rind of 1/2 lemon (the outer part of lemon)
2 tablespoon milk


1) Pre-heat your oven to 190 C 

2) Grate your lemon rind with a grater .

3) Measure out all your baking ingredients .

4) Have your choice of cupcake cups and line your cupcakes cups in your cupcake tins . Usually this recipe makes 12 cupcakes !


5) Sift the flour and baking soda into a large bowl .

6) Beat the Butter , then add the sugar , and then the eggs ! If the batter looks too watery and un-smooth , quickly add some butter to it , so it won't ruin the texture of the cake . If the cake looks like it isn't smooth , the end result of the texture of the cupcake wouldn't look as nice as it is if the batter was smooth .

7) Add the rest of the ingredients in , the lemon rind , milk , flour and baking powder

8) Spoon the batter into the paper cases . The batter should fill more than half of the cupcake cup. Not too full , not to little . 



9) Put your cupcakes in the oven for around 15-20 mins , till your cupcake turns golden brown .


10 ) Transfer to a wire rack to cool. 


I usually cool it for an hour . If the cupcakes are still warm and you put icing on it ,  the icing will definitely melt.

If you prefer having the cupcakes without the icing , it also taste as good ! 


Icing Recipe 




85g of butter
175g icing sugar 
1 tablespoon lemon juice 
piping bags , nozzles , and any cupcake decorations (optional)

1) Squeeze the lemon juice


2) Beat the butter , add half of the icing sugar , the lemon juice , and then the other half of the icing sugar .

3) When the icing is done , put your choice of nozzles in the piping bag , and you're good to decorate the cupcake however you like !

 As i've said on the above , still improving ! Especially with my icing ! haha



Since, there's extra lemon juice , you could always use the rest of it and drink it with warm water !
Apparent its really rich in Vitamin C and it prevents the skin from having acne and wrinkles


 And there you go ! Easy delicious cupcakes ! :) Hope ya guys enjoy it !
